Ingredients
3 no.s Watermelon steaks cut in 4 inch rounds
200 grams Feta Cheese
50-75 grams Cream
Salt to taste
Pepper to taste
½ cup Microgreens
½ cup Sprouted Moong
Method (see video for step by step instructions)
Make a paste of Feta cheese and cream in a blender. Season with salt and pepper. Fill the mix into a piping bag.
Place 1 watermelon round on the plate and pipe the cheese mixture, sprinkle 1 teaspoon microgreens and sprouts.
Now repeat the process with a second layer of watermelon.
Add the third layer of water melon. This time just pipe mixture in the centre and place generous amounts of mixed microgreens and moong sprouts.
Serve chilled. It works as a healthy mini celebration cake as well.
