Ingredients
1 cup diced Mango
15 no.s Black Grapes, halved
5 no.s Cherry tomatoes, halved
1 Onion, cut into rings
5 Basil leaves, sliced thin
2 tablespoons Ricotta cheese
1 tablespoon Olive oil
1 tablespoon Honey
Salt to taste
Pepper to taste
Method (see video for step by step instructions)
In a bowl, add the diced mangoes, basil, grapes and cherry tomatoes. Combine well.
Drizzle the honey over the mixture. Then add the olive oil and combine well. Add salt & pepper to taste and mix again.
Add the onion rings, and toss once more.
Add the Ricotta cheese and mix once more.
Transfer to a serving bowl and serve chilled.
