Mango Ricotta Grapes Salad

Ingredients

  • 1 cup diced Mango

  • 15 no.s Black Grapes, halved

  • 5 no.s Cherry tomatoes, halved

  • 1 Onion, cut into rings

  • 5 Basil leaves, sliced thin

  • 2 tablespoons Ricotta cheese

  • 1 tablespoon Olive oil

  • 1 tablespoon Honey

  • Salt to taste

  • Pepper to taste

Method (see video for step by step instructions)

  1. In a bowl, add the diced mangoes, basil, grapes and cherry tomatoes. Combine well.

  2. Drizzle the honey over the mixture. Then add the olive oil and combine well. Add salt & pepper to taste and mix again.

  3. Add the onion rings, and toss once more.

  4. Add the Ricotta cheese and mix once more.

  5. Transfer to a serving bowl and serve chilled.
